So...this is kinda late as a Thanksgiving leftover recipe but lets face it - many of us are having turkey again for Christmas anyways. There's almost a 100% chance that there's going to be leftovers and instead of having a midnight sandwich, why not try something new and make a curry?
I picked up this recipe from watching Gordon Ramsay's F Word (Season 1, Finale to be exact). If you've been following my blog, you'll know that I'm a complete Gordon Ramsay fanboy. Yes, Hell's Kitchen is quite possibly one of the worst TV shows, ever, and Gordon curses like it's the South Park movie but the man knows his food. It's a shame that the US sees the adulterated, gross edited version of Chef Ramsay on Fox because it overdramatizes everything instead of focusing on his passion for food. Watching the UK version of Kitchen Nightmares, the F Word or heck even Boiling Point will show you that he's a perfectionist who really cares about the restaurant owners and food.
Anyways, this turkey curry is a quick and delicious way to enjoy that dry, tough poultry the day after. You sweat down onions, add curry paste, add coconut milk, add snow peas, throw in turkey and simmer. I can't say it's the best curry I've ever tasted but it sure as hell makes turkey more palatable the next day. Feel free to use your favorite curry paste. I just happened to have Madras on hand. Oh and just to show you how easy this is, I'm explaining how to make it - F Word style.
Gordon's Turkey Curry
Adapted from the F Word, Serves 4
Ingredients:
- 1 onion, sliced
- 2 bay leaves
- 2 tablespoons of Madras curry paste
- 1 can (400g) of coconut milk
- 1.5+ cups water (or more if you want a thinner consistency)
- 1 cup snow peas (aka mangetout), washed
- 1+ cup leftover turkey (or chicken)
1) Onions, slice. Hot pan, add neutral (canola, vegetable, etc.) oil.
2) Add onions and bay leaves. Season (with salt and pepper). Caramelize onions (on low to medium-low heat)
3) Add curry paste. Cook off. 1 minute.
4) Coconut milk, water. Add. Bring to a simmer.
5) Toss in snow peas. Cook, 3 minutes.
6) Add leftover turkey meat. Simmer, 5 minutes (or until snow peas tender)
7) Leftover Turkey Curry - Done.
I had my turkey curry with some naan but it goes well with rice as well. I added some cilantro to my curry but you can leave that out if you want.
