REAL breakfast muffin

I've been making variations of this for breakfast the past few weeks. Basically, it's an English muffin with a fried egg, 2 slices of ham, peanut butter and either avocado or spinach. It's filling, nutritious and relatively healthy.

I fry the egg runny, add pepper and a dash of cayenne. No salt is needed for the egg because you get the salt from the ham. After the egg is done, lightly brown the ham to warm it up a bit and toast your muffins. Spread some peanut butter on one side of the muffin and lay down some spinach or avocado slices.

Be careful when eating the completed breakfast muffin if you fried your egg runny! You may get egg yolk splattered all over your shirt. I've tried cream cheese instead of the peanut butter which also turned out well. What do you eat for breakfast everyday?

Good news everyone!

I have invented a button that links to the Joy Bauer Food Cures network on the right hand side of the blog! As a fellow health care provider, I decided to team up with Joy and her staff when I was approached about the partnership. Check out Joy's website by clicking on the button on the right and read more about Joy here.

Also, Joy's parent site EverydayHealth.com is holding a 2-week, I Heart Summer Challenge. Please read below for more info:

We’re challenging you to get healthy. We’ve partnered with Social Workout to bring you our “I Heart Summer Challenge,” a 2-week plan starting August 15th that will keep you looking and feeling great whether you’re at the beach or at home!

By following a combination of exercise and healthy eating tips, you'll shed pounds and inches in just two weeks, and you'll do it while having fun in the sun! (With sunscreen, of course.)

I decided to enter the challenge for fun and it'd be great to see other people join in on the fun too! Whether you need to lose some weight, start exercising or cut down on your Diet Cokes (guilty) it sounds like a great 14 day program. Click on the picture above to sign up and start today.
